Im sorry it’s been so long Y’all! Things around here have been hectic to say the least!
River is fully potty trained, and uses a bell to let us know she needs to go out. THANK THE UNIVERSE! She also lost her first 2 teeth! She’s doubled in size, and is gaining weight. She’s well on her way to becoming a big girl! Yay!
We are also welcoming a new fur baby to our family on Saturday! It’s a feline BOY! I’ll post more on him when we pick him up. For those counting that’s 3 cats (2 boys and a girl), 1 girl dog, and 2 human girl children. Lol! Yes, to some, that’s a lot, but to us, since we don’t plan on anymore kids, we’re adopting furry orphans… of the older black variety. Oops! Did I let the cat out of the bag!?
So it’s Spring Break here in The Region. (Well not for D2 because she’s only in Pre K.)
2 weekends ago my bff AB came up with her family. When she comes up here we’re so wild and daring that we venture out… to craft stores. (I know! Lock up your glur guns!) On this last trip I but the bullet and bought Wilton doughnut pans and Wilton donut hole pans. My kids LOVE doughnuts! Buuut my Crohn’s doesn’t. I need gluten free doughnuts, and most actual bakeries charge an arm and a leg for anything gluten free. And forget about Dunkin’ Donuts!
On Tuesday I made vanilla cinnamon doughnut holes. They turned out great! However, I didn’t turn them halfway through so the tops were nice and round, and the bottoms were gnarly. But they tasted AWESOME!
Today, D1 and I whipped up another batch, except we added mini chocolate chips. We made the batter, added the chips, and I put the batter into a gallon ziploc bag. I cut the tip of the bag, and piped the batter into the pan. (The container with the blue lid is one of my many containers of gluten free flower.)
The house smells awesome! I’m not sure what it is about baking and making food from scratch, but it makes me feel happy! The girls are at that age where they want to help with everything, and it’s the best! “Mommy can I help you? Please?” I know this won’t last long, so I’m soaking it up while I can!
Back to gluten free. I take a recipe and I just switch out the flour cup for cup with gluten free flour. It hasn’t been a fail yet. I use Better Batter Gluten Free Flour Blend. This stuff is GREAT!!! I order the BIG bag, divide it up into the blue lidded containers pictured above, and it lasts a year-2 depending on how much I’m baking in that year.
Ok, time to eat the scrumptious Doughnuts!!! Have a Terriffic Thor’s Day Y’all!!!
